August is here and, according to the Met Office, the UK is likely to experience another three heat waves this month! Whether you welcome the hot weather or not, there’s nothing more refreshing than a long cold drink at the end of a fiercely sunny day, and the French have built an entire tradition around this special moment.

The apéritif, or apéro, is a much-loved French evening ritual that combines drinks, food and friends; described as ‘‘the evening prayer of the French’’ by the Modernist author Paul Morand. We don’t quite have the same custom in Britain, due perhaps to our generally cooler climate, but we are very happy to borrow from this relaxed French way of life when the temperature rises.

Our August apéritif special, the Pampelle Spritz, has been designed as a tonic to these balmy summer days. Made with a generous measure of Pampelle, a healthy scoop of ice, and topped with plenty of Blanc de Blancs sparkling wine, then garnished simply with a ‘squeeze and slice’ of refreshing pink grapefruit.

If Pampelle is new to you then you really are in for a treat. This complex French liqueur is made from the ripest Ruby Red grapefruits, hand-picked in idyllic Corsica, and then crafted in the Cognac region of France, into the vibrant red liqueur we call Pampelle.

The three-fold distillation process is a true labour of love; firstly the grapefruits are halved and macerated at length until full extraction occurs. Next, the fresh citrus peels are steeped and distilled in copper to enhance their natural aromas, lastly the Ruby Red grapefruits are pressed and reduced until they become a deep, velvety red. The creation of Pampelle doesn’t end here however as the resulting liquid is then infused with the finest dried Yuzu, Cedrat and Bigarade peels before being blended with natural botanicals cinchona tree bark quinine and gentian bitters. The batches, which are now full of flavour, are subsequently blended with their signature Eau-de-Vie, made from grapes that have been fermented and distilled through column stills.

Refined on the banks of the River Charente, this bittersweet liqueur is the result of true French craftmanship. Taking its name from the French pamplemousse (grapefruit), each brightly coloured bottle is stamped with the seal of a Damselfly, a protected species native to the region.

Although Pampelle is delicious served simply chilled, our delightful spritz includes another key ingredient - Blanc de Blancs vin mousseux. Made entirely from Chardonnay grapes, this classic sparkling wine is restrained, elegant, smooth and clean, and an excellent way to complete our Pampelle Spritz.

So when the hot weather feels too much to bear, let's raise a glass with friends and enjoy a delicious French apéro – santé!
