We sent our Festive Turkey Box from Côte at Home to recipe creator Hope Batchelor (@toast_with_hope) and asked her to show us how to turn the last spoonfuls into something brilliant.

Ingredients: 

Ingredients: 

  • 180ml buttermilk (you can make your own by combining 180ml whole milk and 2tsp vinegar or lemon juice and setting aside to curdle) 
  • 2 large eggs 
  • 2 tbsp yogurt  
  • 60ml vegetable oil or melter butter 
  • Pinch of white pepper  
  • Pinch of salt  
  • 150g grated cheese plus around 20g to sprinkle on top (use a mix of whatever you have, the more flavourful the better!) 
  • 250g plain flour 
  • 2tsp baking powder 
  • 1/2 tsp bicarbonate soda  
  • 130g leftover cooked Brussel sprouts and bacon

Preheat the oven to 200d fan 

 

Whisk together the buttermilk, eggs, yogurt, oil/butter and a pinch of white pepper and salt then add in the grated cheese 

 

Add in the flour, baking powder, bicarbonate soda, Brussel and bacon mix and mix together 

 

Spoon into a silicone muffin tin (go right to the top so you get a domed muffin top), sprinkle with the extra grated cheese and an optional sprinkle of mixed seeds or nuts  

 

Bake at 200d fan for the first 5 minutes, then drop the temp to 180d fan and bake for another 15-20 minutes or until a skewer comes out clean
