The breakfast loaf you didn’t realise you were missing. Slice it up, pop it in the air fryer or pan fry to crisp up, then top with crispy bacon, a fried egg, and baked beans for the ultimate leftover breakfast treat. Nutty, hearty, and perfectly savoury, it’s a clever way to make your festive carrot and oat leftovers sing. Click here to follow her on Instagram.

Preheat the oven to 180d fan
Combine all ingredients together into a batter and spoon into a lined loaf tin
Top with a sprinkle of mixed seeds (or nuts if you have those to use up) and a grating of cheese. If you had any leftover stuffing you could also sprinkle this on top)
Bake for 40-45 minutes or until a skewer comes out clean
TIP – if you have any leftover fresh herbs to use up, you can add those in finely chopped. This recipe also works for any other leftover roasted veg you may have – suede, butternut squash, parsnips all work great!
