Slice it up, pop it in the air fryer or pan fry to crisp up, then top with crispy bacon, a fried egg, and baked beans for the ultimate leftover breakfast treat. Ingredients: 

Ingredients: 

  • 245g leftover roasted carrots, finely chopped. 
  • 190g plain flour  
  • 70g rolled oats 
  • 2 tsp baking powder 
  • 1/2 tsp bicarbonate soda  
  • 1 tsp salt 
  • 1 tsp chilli flakes 
  • 1 tsp dried thyme 
  • 1 tsp dried oregano 
  • 1/2 tsp smoked paprika  
  • 2 large eggs 
  • 120ml milk  
  • 60 ml neutral oil or melted butter  
  • 1tsp maple syrup 
  • 30g grated cheese plus extra for grating on top 
  • 30g mixed seeds plus extra for sprinkling on top

Preheat the oven to 180d fan 

 

Combine all ingredients together into a batter and spoon into a lined loaf tin  

 

Top with a sprinkle of mixed seeds (or nuts if you have those to use up) and a grating of cheese. If you had any leftover stuffing you could also sprinkle this on top) 

 

Bake for 40-45 minutes or until a skewer comes out clean 

 

TIP – if you have any leftover fresh herbs to use up, you can add those in finely chopped. This recipe also works for any other leftover roasted veg you may have – suede, butternut squash, parsnips all work great!
